In early episodes of the series, the rest of the family can seemingly hear what Stewie says. In more recent episodes this becomes ambiguous: at times it's unclear altogether, other times (when it's convenient for plot development) they seem to somewhat understand.

Goofs
The most frequent animation error seen in the show is the appearance of the eyebrows (and some cases the eyes). The eyebrows are known to disappear and/or reappear at times, or in rare cases even "duplicate", creating an extra pair of eyebrows (as seen on Lois' father when Peter meets him in "Death Lives").

In the living room, the rug will be purple, and either in the next couple scenes or in the next episode it will be yellow and vice-versa.

Peter's shirt buttons the wrong way. Men's shirts button with the left side over the right side, but Peter's shirt is backwards, in the same direction as Lois's shirt. Occasionally, but very rarely, this changes.

We all feel that Stewie is almost certainly gay, and he's in the process of figuring it out for himself.
