ABecause he couldn't predict that his flight would crash. An FAA search team is trained to go over a crashed plane with precision, including searching the trash bins of the plane for any evidence. Whip probably thought he could recover the bottles after landing in Atlanta after the passengers and his flight crew had left the plane. He might also have thought he could replace the bottles later. One of the characteristics of being a "functional alcoholic" is having the ability to cover one's tracks with confidence.
QWhat happened to Nicole after she left Whip?
AAt the end, we see pictures of her on the wall in Whip's cell. Although the camera focuses on the last one (the one he took on his porch), you can see that the others were taken in jail, presumably when she came to visit him, along with his ex-wife and son. She's wearing street clothes, and looks clean and healthy. Looks like her recovery is working out well for her.
