In her book "The Sense and Sensibility (1995) Screenplay & Diaries: Bringing Jane Austen's Novel to Film", Emma Thompson writes that after a particularly difficult day filming a sequence that involved a flock of sheep, Ang Lee swore that he would never again use the animals on a movie set. Ten years later, however, Ang Lee went on to direct (and win a directing Oscar for) Brokeback Mountain (2005), which is about two men who meet while sheep herding.
Originally, there was to be a scene in which Hugh Grant would kiss Emma Thompson. This scene was deleted, however, because the film was too long already and the scene was felt to be inappropriate for Austen's time. They deleted another scene between Elinor and Mrs. Dashwood because of the length and the belief that it was not necessary for the exposition.
The scene in which Lucy Steele reveals to Fanny Dashwood that she (Lucy) and Fanny's brother (Edward) have been secretly engaged initially shows Lucy stroking a dog. When Fanny realizes what Lucy is saying, she becomes hysterical and sends everything flying, but the dog is no longer there.
In the wedding scene, Colonel Brandon wears a military coat - but it has only a single epaulette, which was the mark of a junior officer, no higher rank than captain. And it has gold buttons and silver lace loops on the lapels, which is an impossibility in British military uniform where buttons and lace are always the same colour, either both silver or both gold. (Mixed metals colours were known in French military uniforms, but never British ones.)
When Mrs Dashwood stands alone looking at the paintings on the wall in Saltram House, there is a portrait of Oscar Wilde. The movie takes place in 1810, he would not be born for another 46 years.
Elinor Dashwood: Marianne, please try... I... I cannot... I cannot do without you. Oh, please, I... I-I have tried to bear everything else... I will try... Please, dearest, beloved Marianne, do not leave me alone.
Sir John Middleton: You know what they're saying, of course. Hm? Word is, you've developed a taste for certain company. And why not, say I. A man like you in your prime... she'd be a very fortunate young lady.
Marianne (Kate Winslet) ends up with Col. Brandon (Alan Rickman) and Elinor (Emma Thompson) with Edward (Hugh Grant), whose brother married Lucy (Imogen Stubbs).
