Kal Penn, who plays Kumar, is a vegetarian, so technicians made veggie Castles for him.

Neil Patrick Harris plays a character named "Neil Patrick Harris" and is billed as such rather than being billed "as himself." According to an interview on NPR, this was done to make clear that he plays a parody of himself.

Harold shares a jail cell with Tarik, who tells him not to get riled up by people because "in the end, the universe tends to unfold as it should". He doesn't give credit, but Tarik is quoting the 1927 poem "Desiderata" by Max Ehrmann.

Goofs
In the beginning when Billy says he owes Harold "just one", he initially points with his left hand, but subsequent shots show him using his right.

When Harold and Kumar stop the Bronco just in front of the cliff, only the left front wheel is hanging over the cliff. When they try to back up, that wheel rolls freely as if they can't back up. That front wheel rolling clearly shows the vehicle is in 4 wheel drive, and even if it wasn't, all Ford trucks are rear wheel drive by default, meaning with three wheels still on solid ground, the Bronco should have backed up with ease.

When Kumar stops the car and urinates on the bush, the street sign changes direction repeatedly between shots.

Q
How does the movie end?
A
The stolen Bronco comes to an abrupt stop at the edge of a cliff where, looking down, the boys are astonished to see the Cherry Hill White Castle at the bottom of the cliff. Noticing a hang glider on the roof of the truck, they glide down into the valley, landing in a tree right across the street from White Castle. They each order 30 hamburgers, four fries, and four sodas. When it comes to pay for it, however, they realize that they have no money. Suddenly Neil Patrick Harris approaches them and offers to pay for their food. He tosses in another $200 for the 'love stains' he left in the back seat of Harold's car and returns the keys. After finishing their meals, Kumar has an epiphany and decides that he will go to his interview and become a doctor. When JD (Rob Tinkler) and Billy (Ethan Embry) walk into White Castle with two girls on their arms, Harold realizes that he's been suckered into doing their work so that they could party all weekend and tells them that he is not going to be suckered anymore. Harold and Kumar return to their apartment where they run into the girl of Harold's dreams, Maria Quesa Dilla (Paula Garcés), in the elevator. Kumar makes up an excuse to leave them alone, and Harold ends up confessing his love for Maria and kissing her. Unfortunately, Maria is leaving for 10 days in Amsterdam. In the final scene, Kumar convinces Harold that they need to follow Maria to Amsterdam to keep her safe from all those 'suave' Europeans. Not to mention that marijuana is legal in Amsterdam.
